Baked Beans & Chilli Tuna Shakshuka

Ingredients :

1 can Ayam Brand™ Chilli Tuna*

1 can Ayam Brand™ Baked Bean

2 tomatoes
-
1 small yellow onion (or ½ large)

1 garlic
-
¼ red capsicum
-
1 green chilli
-
2 eggs
-
2 tbsp mozzarella cheese
-
Salt & black pepper to taste
-
1 tbsp olive oil
-
Some water for cooking
-
Some mixed herbs of your choice
-
Coriander for garnishing

2 slices bread (preferably sourdough)
Preparation:

Chopped up all the ingredients.

Heat up skillet with olive oil to fry onion till soften then add garlic to fry till fragrant.

Add in capsicum, chilli and tomatoes, mix well.

Season with salt and herbs.

Add some water to simmer for 10 mins at low heat.

Pour in chilli tuna and baked beans, slightly mix.

Use a spatula to make 2 wells and pour in the eggs.

Cover and simmer till eggs almost cook, add mozzarella and cook for another 1 min.

Add black pepper and garnish with coriander to serve with toasted buttered sourdough!
