Keto Pancake

Ingredients:

4 large eggs, separated

½ cup coconut oil

4 tbsp coconut flour, sifted

2 tbsp Ayam Brand Coconut Milk

1 tsp baking powder

1 tsp keto maple syrup

1 tsp pandan essence

Pinch of salt
Preparation:

Separate egg whites in a separate bowl, beat till soft peaks form. You can use a cake mixer if it's easier.

In another bowl, place egg yolks, coconut oil, coconut milk, sifted coconut flour, baking powder, maple syrup, pandan essense and salt. Mix till you have a smooth batter.

Put a third of the egg white mixture into the coconut bowl and fold them in completely. Repeat the process until all the egg whites are used up and you have a smooth batter.

Heat up pan on light heat. Spray with avocado oil. Scoop some batter into the pan. Batter should make 6 pancakes. Cover and let cook for about 2-3 minutes. Remove cover, flip pancake over and cook for another minute.

Stack pancakes up in a tower on a serving plate.

Serve with some fresh berries if you like and drizzle more keto maple syrup before serving.
