Pumpkin Coconut Kuih

Ingredients (A):

300g pumpkin

90g fine sugar

¼ tsp salt

200ml Ayam Brand Coconut Milk

100ml water
-
130g tapioca starch
-
20g rice flour
Ingredients (B):

80g fresh grated coconut

¼ tsp salt
-
Melted chocolate
Ingredients (C):
-
Melted chocolate
Preparation:

Peel, seed and cut pumpkin into pieces. Steam pumpkin over high heat for 10 minutes. Mix ingredients (B) together and steam for 5 minutes. Set aside to let it cool.

Add all ingredient (A) into a blender. Blend till smooth. Sieve the batter and pour into a greased tin.

Steam over medium high heat for 35 minutes. Set aside to cool down completely.

Use cookie cutters to cut out kuih. Coat with grated coconut and decorate with melted chocolate as desired.
